Quinoa Stuffed Mushrooms

These quinoa stuffed mushrooms got me at the first sight! I was pleasantly surprised by the taste and wasn’t expecting it to be so filling. Not to mention the health benefits of quinoa which is loaded with many important nutrients like Magnesium, Folate, Copper, Iron, Potassium and others. Mushrooms on the other hand are a great source of Vitamin B complex that helps the body release energy from macronutrients. If you’re thinking about preparing yourself a nutritious and meatless meal definitely give this recipe a try.
Ingredients:
- 4 large portobello mushrooms
- 65g of quinoa
- ¼ red onion
- 15g of kale
- 50g of mozzarella or feta cheese
- 15g of grinded or chopped mixed nuts
Dressing
- 1 average sized garlic clove
- 1 tbsp of lemon juice
- 2 tbsp of olive oil
- A bit of pepper
Mix together all ingredients.
Preparation:
1. Cook quinoa in 1:2 ratio with water
2. Preheat your oven to 180º C
3. In the meantime remove the mushroom stalks and chop together with red onion and kale. Mix well
4. Add cooked quinoa and crumbled mozzarella or feta cheese to the mix
5. Season it with salt and pepper to taste
6. Spoon the mix onto the mushrooms cups, lightly pressing into place
7. Pour mushrooms over with the dressing and place then in the baking tray and roast for 20min
